The Sunroom

The sunroom lounge is the sister venue to The Conservatory Bar in Cairns – which boasts over 800 wines and a ‘2 wine glass’ award from the Wine list of the year award show. You will certainly notice the similarities between the 2 venues.







Venue Manager Maddy
Maddy grew up in the beautiful wine region of south Gippsland, where she fell in love with wine – its history, cultivation and creation.
For Maddy, every wine ever made is like a time capsule in a bottle. Each individual wine telling a story of time and place, of the hands that tended to the vines, of the uniqueness and expression of the terrain and how this is transformed by the artistry
of winemaking.
Maddy started learning about the hospitality and wine industry at 18 when she worked for Young Gun Winemaker of the Year nominee Marcus Satchell and his wife Lisa Sartori of Dirty Three Wines.
Over the next three years, she was involved in all aspects of the wine making process, from shoot thinning, to lawnmowing the vineyard, picking and processing the fruit, blending and bottling the wine, watching and waiting as it transformed and finally to the joy of tasting the magic. She also sold the final product at the Cellar Door.
Next Maddy joined the wine team at Vinomofo before working as the marketing consultant and vineyard hand at Rob Hall Wines. Her experience includes roles with Levantine Hill in the Yarra Valley, events such as Pinot Palooza in Melbourne and Sydney and the Gippsland Wine Awards, where she worked as a Steward.
Maddy takes her her job very seriously and explains “I love creating and preparing the tapas served at the Sunroom, welcoming my customers and providing them with a personalised experience of the harmony of excellent food with great wine. Ross

Having settled in Cairns some years ago, Ross has become a big fan of Australian wines which he believes benefit from the extraordinary freedom our winemakers have to create and produce some truly incredible stuff. With less top-down industry restrictions, huge climatic variation and an amazingly diverse landscape, Australia is able to produce a broader range of varietals in a wide array of styles than the old-world producing nations. “Go to wineries in Tuscany, and you’ll spend the rest of your life drinking Sangiovese, whereas, in Australia, you could have a winery in the Barossa and be tired of making Shiraz, so they think, let’s give Zinfandel a go!” he says.
Ross is never happier than when he’s talking drinks and he has the smarts to back up the passion. He is the perfect person to explain the qualities of old Burgundy and to give you a crash course on the subtleties of fiano or assyrtiko, skin contact, natural wine, or which wine goes best with generous chunks of red Leicester. He brings all this wisdom with a dash of English charm to his work managing the Sunroom Lounge and the Sunset Bar where he oversees an extensive cocktail menu, a wide variety of craft beers and very impressive wine list.
